Enjoy a hot cheesy snack to share with a delicious combination of rice and melted cheese.
1. Cover rice and salt with water, bring to the boil and simmer on very low heat for approx. 20 minutes. Remove rice from the pot, leave to cool a little and mix with grated cheese and one egg.
2. Leave mixture to cool for 30 minutes, then moisten hands and form small balls. Roll balls in flour. Whisk second egg. Roll balls in egg mixture and then coat with breadcrumbs.
3. Fry rice balls in hot oil for approx. 5 minutes until golden brown. Rice balls are best served hot with a sweet and sour dip.
